Chocolate cupcakes with cream cheese filling, or, my attempt at Hostess.

These chocolate cupcakes are what I made for my friend’s birthday party tonight. They are a chocolate cupcake with cream cheese creme filling and a chocolate ganache frosting. They are not vegan this time, as they are headed to people who are not dairy conscious in any way. The ganache in the above picture required some tweaking, and appears much fluffier than the final product. The recipes!

Chocolate cupcake

  • 1-2/3 cups all-purpose flour
  • 1/4 teaspoon baking soda
  • 2-1/2 teaspoons baking powder
  • 3/4 cup unsweetened cocoa powder
  • pinch of salt
  • 3.5 tablespoons butter, softened
  • 1-3/4 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1-1/4 cups milk

Preheat oven to 350. Line cupcake pans with about 20 liners. Sift together dry ingredients in a medium mixing bowl and set aside. Cream together the butter and sugar until light and fluffy, then add eggs one at a time. Mix in the vanilla. Alternate adding the dry ingredients and the milk into the sugar/butter mixture, and blend well. Spoon batter into liners, until they are 3/4 full. Bake for 15-20 minutes. Remove from oven and allow to cool.

The cream filling:

For this I just used equal parts cream cheese, granulated sugar, and powdered sugar. I used one cup of each, and ended up with too much, a half cup would probably suffice.

For assembly purposes, I would advise adding the creme to the cupcakes before making the ganache, so it has time to harden a bit in the fridge. Once the cupcakes have cooled, poke holes in the top with your finger and probe around a bit to make room for the filling. Once you have added the creme, refrigerate for about an hour to allow it to harden a bit. Then remove the cupcakes, dip them in the ganache, and return them to the fridge to set before serving (the chocolate gets runny.

The Ganache:

Due to a whole lot of tweaking, I can’t say for sure what the measurements were on this, but I think they were as follows…

  • 2/3 c milk
  • 1/4 c sugar
  • 1/3 cup corn syrup
  • 4 oz baker’s chocolate, chopped
  • one tablespoon maple syrup
  • 2 teaspoons vanilla extract

Bring milk to a boil, stir in sugar. Remove from heat and add remaining ingredients, stirring until smooth (and the chocolate is melted.
